Domaine Capmartin is run by Simon Capmartin in Madiran, southwest France, where he has quietly transformed one of the region’s most traditional appellations with a progressive, low-intervention approach. Certified organic for nearly a decade and moving towards biodynamic certification, Simon works with native yeasts, no added sulphur and gentle extraction throughout. Pimpant is as natural as it gets, unfiltered, unfined and bottled without added sulphites, and may show a slight deposit in the bottle as a result. Carbonic maceration gives it its lifted, juicy character, with both alcoholic and malolactic fermentation carried out in stainless steel over 6 months.
