Entero is a project built around old vine Macabeo from vineyards sitting at over 700 metres above sea level in Manchuela, where the marked diurnal temperature variation produces pristine, healthy grapes with vibrant freshness and vivid flavour. Organic cultivation comes naturally at this altitude, where night-time breezes moderate the temperature and rainfall between May and September is rare, almost eliminating the risk of disease. The grapes are fermented in tank with minimal manipulation and bottled without filtration to preserve the fullest possible connection to their provenance.
